Pan Fried Trout
This recipe is great for a shore lunch. The only real difficulty is getting the trout to oblige.
Ingredients:
* 4 trout ( approx. 3/4 lbs. each)
* 1/2 cup all purpose flour
* 1/2 cornmeal
* 1/8 tsp. cayenne pepper
* 1 tsp. salt
* 1 tsp. ground black pepper
* 3 tbsps. olive oil
* 2 lemons
Directions:
- Remove viscera and gills from the fish and rinse lightly with cold
water.
- Heat oil in a large skill over medium heat.
- Using a shallow dish, combine ingredients.
- After bringing heat to high, dip fish in mixture and allow to drip
to remove excess.
- Fry for about 4-6 minutes on each side or until fish flakes with
a fork.
* Use lemon wedges as a garnish if desired
Beer Batter for Fish
Ingredients:
* 1 lb. of fish fillets
* 1/2 cup of beer ( your choice - preferably a light beer)
* 1/2 flour
* 1 tsp. salt
* 1 tsp. ground black pepper
* 1 egg
* 1 litre of oil for deep frying
* 1 lemon
Directions:
Beat the eggs and beer in a bowl. Add flour, salt and pepper and beat until smooth. Dip your fish in the batter and then allow excess to drip.
Heat oil on high and dredge coated fish in oil for a few seconds then release. This prevents them from sticking to the bottom. Cook for 3-4
minutes till golden brown or when fish flakes easily. Place on a paper towel to drain excess oil. Remember to reduce heat to prevent the oil
from burning.
