Pan Fried Trout
This recipe is great for a shore lunch. The only real difficulty is getting the trout to oblige.
Ingredients:
* 4 trout ( approx. 3/4 lbs. each)
* 1/2 cup all purpose flour
* 1/2 cornmeal
* 1/8 tsp. cayenne pepper
* 1 tsp. salt
* 1 tsp. ground black pepper
* 3 tbsps. olive oil
* 2 lemons
Directions:
- Remove viscera and gills from the fish and rinse lightly with cold water.
- Heat oil in a large skill over medium heat.
- Using a shallow dish, combine ingredients.
- After bringing heat to high, dip fish in mixture and allow to drip to remove excess.
- Fry for about 4-6 minutes on each side or until fish flakes with a fork.
* Use lemon wedges as a garnish if desired
Beer Batter for Fish
Ingredients:
* 1 lb. of fish fillets
* 1/2 cup of beer ( your choice - preferably a light beer)
* 1/2 flour
* 1 tsp. salt
* 1 tsp. ground black pepper
* 1 egg
* 1 litre of oil for deep frying
* 1 lemon
Directions:
Beat the eggs and beer in a bowl. Add flour, salt and pepper and beat until smooth. Dip your fish in the batter and then allow excess to drip. Heat oil on high and dredge coated fish in oil for a few seconds then release. This prevents them from sticking to the bottom. Cook for 3-4 minutes till golden brown or when fish flakes easily. Place on a paper towel to drain excess oil. Remember to reduce heat to prevent the oil from burning.
* Use lemon wedges as a garnish if desired
Derrell's Baked Fish
Ingredients:
* fish or fillets
* stove top dressing (or your ownstyle of dressing if you prefer)
* One cup of fresh cooked medium shrimp, peeled and chopped.
* One small can of white crab meat (packed in water)
* 8 oz of thousand island dressing and 8 oz of real mayonnaise (NOT SALAD DRESSING)
- You may use whole fish or fillets.
- Remove the head and gut the fish. Leave the skin on the fish but scale it if it has scales.
- As the stove top dressing is cooking; mix the shrimp and crab meat into the dressing.
- Now place the fish into a baking dish placing the prepared dressing into the fish cavity and completely around the fish.
- Use 8 oz of thousand island dressing and 8 oz of real mayonnaise (NOT SALAD DRESSING)
- Mix together and cover the entire dish.
- Now, bake in your over at 350 degrees .
